Even the best-built deck oven needs to be run correctly to deliver consistent results shift after shift. A few habits make a noticeable difference.

Preheat fully, not just to temperature. The deck itself needs time to absorb heat, not just the air inside the chamber — rushing this step is one of the most common causes of pale, underbaked bottoms.

Rotate strategically. Even well-built ovens can have minor hot spots near the door or back wall; rotating trays partway through the bake evens this out.

Manage steam carefully. Steam injection early in the bake supports crust development, but too much for too long can leave interior crumb underbaked.

Keep the deck clean. Built-up debris on the deck surface can scorch and transfer off-flavors to the next bake — a quick brush-down between batches goes a long way.

Consistency comes from process as much as equipment — pairing a well-built oven with a repeatable routine is what actually produces the same great loaf every time.
